New York BarbecueI enjoy New York barbecue.  I love the smell of the cooking meat, the crackling of the fire, and obviously, the taste of the awesome food.  Some people can just feast on barbecue and that is all.  While there is nothing wrong with that – heck I have done that myself a number of times – I prefer to eat my barbecue with an equally awesome side dish.  My favorite side dish to get is garlic mashed potatoes.

As much I like garlic, I find it very hard to get the chance to eat something with garlic in it; garlic mashed potatoes are the perfect combination of garlic and one of my favorite foods of all time, mashed potatoes.  Mmm, yummy mashed potatoes.  Add gravy to this and I am in culinary heaven.  The distinct taste of garlic and the flavor of some really good homemade mashed potatoes combine into an exceptional side dish that is arguably a staple in New York barbecue.  I like to chew on some BBQ and then spoon some garlic mashed potatoes into my mouth.  Sometimes, if it is something like ribs I dip it into the mashed potatoes and eat it.

It is hard to beat mashed potatoes and gravy and when you add BBQ into the mix, it is almost impossible to surpass.

New York barbecue“Let us dine out for lunch tomorrow.”

“What are you in the mood for?  Chinese?”

“No.  We went to the Chinese restaurant last weekend.”

“What about Mexican food?  We cannot go wrong with Mexican.”

“Ugh. We ALWAYS go out for Mexican food.  In the past three weeks we ate Mexican five times!  No, we need to go someplace else.”

“Okay, geez.  Let me think for a bit…”

“Oh!  What about New York barbecue?”

“Barbecue?  Really?”

“Yeah!  It will be great!  It has been a while since I had barbecue.”

“What are you talking about?  We went to that football party two weeks ago and we barbecued some burgers.”

“That is not true barbecue.  True New York barbecue is a very slow process of cooking that mostly uses smoke to cook with some help from the fire.”

“All right…”

“I am so excited!  I am going to start off with some beer battered onion rings.  Then on to the main dish of barbecue pulled pork.  And since I MUST get a side with it, I will also have garlic mashed potatoes.  What are you going to get?”

“I am thinking I will get some barbecue ribs.”

“It is settled then!  We are going to eat barbecue this weekend.”

New York Barbecue & Delicious Sides

New York barbecueWith New York barbecue, as far as I am concerned, I cannot have the BBQ meat without a side or two to eat with it.  In fact, in recent memory I cannot think of a time in which I ate only BBQ without anything else.  It somehow feels wrong that I eat just the meat on its own.  Even when I prepare meats in my own house I always eat it with another dish;  to do otherwise would seem unnatural to me.  I am lucky then that BBQ places prepare side dishes to complement their barbecued food.

BBQ joints prepare scrumptious appetizers like beer battered onion rings, rib tips, chicken wings, and calamari to whet your appetite for the main course.  Once you finally get your BBQ it comes with a side like BBQ baked beans, sweet potato fries, candied yams, or garlic mashed potatoes – my personal favorite.  There have been times where I have gotten garlic mashed potatoes AND BBQ baked beans; after all, why not?  With BBQ I can have my cake and wholeheartedly eat it too.  I am also a fan of corn on the cob that has been covered in butter.  Now doesn’t that sound great?

When ordering New York barbecue, do yourself a favor and order a side as well.

New York barbecueLast summer I had a chance to indulge myself with some absolutely awesome New York barbecue at the Big Apple Barbecue Block Party in Manhattan.  In a sentence it can best be described as two whole blocks of delicious barbecue fare from all over the country.  Pitmasters from Kentucky to Texas, and those homegrown locally in NYC and more, gathered together to show off their fine food.  At hand were a wide variety of food including: baby back ribs; beef brisket; St. Louis Style ribs; smoked sausage; and my personal favorite, pulled pork shoulders.  Whenever you bought some barbecue it came with a side or two.  My favorite combo was pulled pork shoulders and beans.  I would always ask for extra sauce with my pulled pork.

Besides the actual barbecue sauce, some BBQ Pitmasters used dry rub to season their food which was also great.  In Madison Square Park where the event was being held – and will be held again this year – you can also purchase T-shirts, specialty BBQ sauce, and beer if you were in the mood to imbibe!  I was tempted but chose to enjoy the full flavors of New York barbecue.

This event – which will happen again this year on June 9 & 10 – was the ultimate form of BBQ catering NY.  I cannot wait for it to come around again.

NY barbecue“Let’s have a BBQ outside!”  Most of us have heard this phrase said at least once in our lives and many of us gladly join in on the delicious feast.  The truth is though, a grand majority of us have never truly barbecued anything before.  When you place food on heated grills to cook what you are doing is grilling your food.  True, traditional NY barbecue is something else entirely.

Traditional BBQ is a slow cooking process that uses smoke to flavor to the meat.  The radiant heat from the combustion source helps cook while the abundance of smoke adds a distinct flavor to the meat and assist in cooking.  Smoking is often referred to as cooking “low and slow”.

Grilling is a much faster way to cook meats and involves a significant amount of direct heat from the grill itself.  What we see most often During outdoor events is someone is cooking meat on a grill suspended above a fire.  This is sometimes referred to as gridironing (not to be confused with football which, in itself, is a common enough event to warrant having a BBQ.)

NY BarbecueWhen ordering BBQ catering NY, I think I will start out this time with ribs.  Good ol’ ribs marinated with undoubtedly sweet and awesome BBQ sauce.  I can picture it now: I will take my first bite and chew slowly, taking great care to savor as much of the meat, dry rub, and BBQ sauce as possible.  After having been slowly cooked for hours the meat is so tender that it comes right off the bone with every bite I take.  I can finish half a rack easily.  I could even finish off an entire rack if I was that hungry and trust me, I’ve been that hungry before.  While feasting I will take a few bites out of some corn, bread, and garlic mashed potatoes.

This bout of eating will culminate in me eating my absolute favorite BBQ dish: BBQ pulled pork.  After spending at least 12 hours being slowly cooked both it and my stomach are ready to meet one another!  And of course, it will be marinated in very generous amounts of BBQ sauce.  I will scoop as much of the BBQ pulled pork into some bread for easier eating.

When thinking of NY barbecue, it is hard not to think about delectable beef and pork ready to eat.

The Joys of New York Barbecue

New York BarbecueWho says you have to head into the Midwest or the South for quality BBQ?  You can experience excellent food nearby with New York barbecue.  From smoked beef brisket and ribs to BBQ pulled pork, you can have a taste of BBQ right here in the city.

My personal favorite is BBQ pulled pork.  Tender pork doused in sweet, flavorful BBQ sauce is a culinary experience to die for.  And this is from someone who isn’t a fan of pork products.  There’s something about the smoky flavor, texture, and awesome BBQ sauce that makes BBQ pulled pork the outstanding exception to the rule and a winning combination for me.  In second place comes BBQ ribs.  Slow cooked meat with seasoning and BBQ sauce makes this a definite must-have for me.  I especially like it if the meat is so tender it peels right off the bone.  When given the chance and my stomach is empty, I can consume a whole slab of BBQ ribs no problem.  Am I being gluttonous?  Probably.  But being labeled that is a small price to pay for exquisite BBQ.

“I’m getting the New York barbecue pulled pork sandwich.”

“That’s such a lunch item.”

“So? I like pulled pork. And I never get it. Just because you wanted to come here for dinner you think I shouldn’t get what I really want? Well unfortunately we haven’t ordered Queens catering to our home so I can’t have a BBQ pork sandwich tomorrow for lunch.”

“Okay, okay, jeez. I like pulled pork too. The thing about this place’s pork is that it’s moist. That’s crucial to a good sandwich. Even when it’s smothered in sauce, when the pork’s not cooked right, like if it’s overdone, the entire thing’s no good.”

“Good. I like pork.”

“Me too. It’s just that I can never quite get brisket down. And when I do order it at one of these New York barbecue restaurants, it’s often too fatty. Not here. This place does it right. The perfect amount of fat to make the meat tender and flavorful; right amount of sauce for dipping; plenty to go around.”

“Can I try?”

“I thought you wanted your pork sandwich.”

“I do. But everything you’ve just said makes me want to see if you’re right.”

“Yeah… Here, take a bite.”

My Ex Didn’t Like The Best BBQ NYC

restaurants in queensDinner time, and there’s nothing I want more than a slab of meat. I once dated a vegetarian girl. It was tough. She was beautiful but we could never really enjoy food together. And food is one of life’s great pleasures, so when the enjoyment of it is unbalanced it makes you feel like you’re on different wavelengths, which opens a gulf between you and your girlfriend. She’d take me to vegetarian restaurants, which were often too salty to compensate for the lack of flavor in their tasteless entrees.  I took her to the best BBQ NYC and told her she could get sides.

It was then I realized there was no way I could be with her, as a friend or a partner. When I sat down for dinner and talked about how moist the pulled pork was, or how tender the beef brisket was, all she could do was say yeah, and this mac ‘n’ cheese is good too. I couldn’t trade bites with her. And she was somewhat condescending, as though meat-eaters were unhealthy and murderers. The fact is I love meat and I need it. I dumped her the next week. I need someone who can go with me and enjoy one of my favorite restaurants in Queens.

New York Barbecue Sauce

best bbq nycBarbecue sauce is, like ranch, a purely American invention. Americans love sauces–over our meat, salads, canapes. We like sauces drizzled over whatever we’re eating! But barbecue sauce in particular has a special place in our collective heart.

Something about the tangy, sweet, viscous maroon sauce is so versatile. Most New York barbecue sauces are tomato-based, with molasses and vinegar and sugar added. But there are spicy barbecue sauces too, which add another level of complexity to this flavor. No conversation about New York barbecue would be complete without Buffalo sauce. This sauce is a relatively recent invention, arising in the late 1970s or early ’80s, although some claim it to exist from even earlier. Typically it is served with blue cheese dressing and celery to balance the spiciness in the eater’s mouth.

My favorite barbecue sauce incorporates elements of both Buffalo sauce and the sweet traditional sauce. Some barbecue styles have a few kinds of sauce, but my absolute favorite is found at my favorite BBQ restaurant NY. Their sauce comes slathered on ribs and pork, and you can dunk chicken, shrimp and catfish in it too. The beauty of being American is that we can always find new uses for delicious BBQ sauce.
